Bar 1805 Ibiza

Bar 1805 Ibiza is the brainchild of visionary cocktail artisan Charles Vexenat, an avant-garde Frenchman with an Ibicenco heart. His bohemian Sa Penya speakeasy is named in honour of Henri-Louis Pernod, who launched the mythical green liquor’s first recognisable brand, Pernod Fils, in 1805. Charles learnt his trade as an apprentice to some of the world’s most highly regarded barmen and has received numerous industry awards during his career. He is a pioneer of Ibiza Town’s underground cocktail scene and takes L’OFFICIEL IBIZA on a late-night tour of his favourite haunts and their top tipples.

Green Beast at Bar 1805.

Head down a few steps to carry on the evening at best rum parlour in town. Paradise Lost is where the pirates of the island hang out. Order Jimmy’s signature twist on a Rum Sour with coconut wash rum, lemongrass, soft spice syrup and lime juice.
