Recipe: The perfect Flanky, a hybrid dessert, between a flan and a cookie

For 10 individual pieces or 1 large Flanky.
Ingredients :
FOR THE COOKIE DOUGH
200g flour
100g butter
1 egg
50g coconut sugar
50g brown sugar
150g of quality chocolate of your choice
1 vanilla pod
FOR THE FLAN
850 ml of milk
250 ml of 35% cream
4 egg yolks + 1 whole egg
80g vanilla pod cornstarch, split and scraped
200g of sugar
Preparation :
FOR THE COOKIE DOUGH
Melt the butter, mix it with the sugars.
Add the egg and vanilla pod seeds. Mix again.
Add the flour and the chocolate previously cut into pieces of random size.
Fill the bottoms of the molds with cookie dough and refrigerate while you make the flan mixture.
FOR THE FLAN
Preheat the oven to 180 °.
Scrape the inside of the vanilla pod.
Heat the milk with the vanilla and sugar. Leave to infuse for 10 minutes off the heat after boiling.
In a mixing bowl, mix the starch and cream. Add the eggs and the tempered milk.
Place this mixture over low heat. Mix constantly until the mixture thickens.
Pour into molds previously lined with cookie dough.
Cook the small Flankys for 20 minutes, and the large one for 35 minutes. The cooking time depends on your oven and the size of the molds, so monitor the cooking carefully.
