How Mikasa is heading up Ibiza&rsquo;s botanical revolution

The global plant-based revolution is gathering pace, as people realise that what we consume has a profound impact upon the health and stability of our environment. Ibiza has been at the vanguard of that revolution for many years, and the new vegan restaurant at <a href="https://www.mikasaibiza.com/">Ibiza Town&rsquo;s boutique hotel MIKASA</a> has been the stealth hit of summer.

Tucked neatly into the northern corner of Marina Botafoch, Mikasa is refreshing as a slice of cucumber, clad in the palest of mint-green tiles and peppered with dense green foliage. While being only a stone&rsquo;s throw from the action, the location feels calm and cosseted, ruffled by the gentle sea breezes that flutter across the roof terrace. While in fact a restaurant with rooms &ndash; there are sixteen neat suites to enjoy &ndash; it&rsquo;s the roof terrace restaurant at Mikasa that&rsquo;s created the biggest buzz. With a philosophy that focuses on nurturing from the inside out, the nourishing menu is entirely plant-based and represents owner Sofija Mehta&rsquo;s desire to pioneer a contemporary model of ecological living. Sofija and her husband, along with their two small children, adopted a plant-based diet some years ago and feel deeply passionate about this conscious way of living. Breakfast, lunch and DJ-fuelled dinners are all enjoyed on the panoramic rooftop, where guests are encouraged&nbsp; to kick back, soak up the remarkable views across the bay to Dalt Vila and take a moment or two to step away from the hustle below. A late breakfast or lunch at Mikasa has become the go-to pre-boat date, with guests dropping in for tofu scramble, Sicilian caponata and chia seed pancakes before heading out for a day on the water. Thanks to the restaurant&rsquo;s proximity to Ibiza&rsquo;s best nightlife &ndash; including Sofija&rsquo;s gilded playground, <a href="https://www.clubchinoisibiza.com/">Club Chinois</a> &ndash; the rooftop is the ideal location for a pre-club supper. It&rsquo;s also where many a Pacha DJ has been revived with a detox juice (and a side of activated charcoal) the morning after the night before.

Come evening, it&rsquo;s Ibiza&rsquo;s eco-conscious smart set (and a raft of the owners&rsquo; local island gang) who descend on Mikasa, to watch the extraordinary sunsets that silhouette the Old Town and to gather around long tables to celebrate, to feast and to dance. Dishes such as falafel burger with confit tomatoes and chickpea tortillas with cashew cream and coriander pesto are the stars of the show, while organic wines and extraordinary herb-infused cocktails make for a celebratory atmosphere. Science tells us that a plant-fuelled community is the only way to save the planet. With venues like Mikasa leading the way, there&rsquo;s no excuse not to jump onboard.
