How to make a perfect guacamole?
Summer is not over and neither is the aperitif season! To celebrate this end of summer gently, we try our hand at making a fresh and spicy guacamole , which we accompany with a few corn tortilla chips for a gluten-free version. And who better than the Parisian restaurant Coya – whose Peruvian fusion dishes have been wildly successful – to entrust us with their tasty signature recipe?
Ingredients :
100gr of Aji Amarillo puree
10cl of water
1 medium sized avocado
20g red pepper
30g of red onion
Lime juice
Salt
Coriander
Corn tortillas (optional)
Preparation :
In a bowl, mix the Aji Amarillo puree with the water.
Take the medium sized avocado, cut it in half. Remove pit and skin.
Add the red pepper in brunoise without the seeds and the red onion in brunoise, a little Maldon salt and lime juice.
Finish with coriander. Serve with corn tortilla dippers.
