Summer recipe: watermelon invites itself into our salads
Yes, yes, watermelon in our salads… The flagship fruit of the season invites itself into our starters, and it suits it well! Super thirst-quenching, refreshing and sweet just enough, we found the perfect combination for a summer salad just the way we like them.
Ingredients
2 cucumbers
300g watermelon
200g Feta
1 red onion
1 lemon
A few leaves of basil and mint
A handful of toasted pine nuts or crushed walnuts
Salt and pepper
Olive oil
Preparation
Cut the watermelon into medium-sized cubes.
Cut the cucumbers and onion into rings.
Chop some basil and mint leaves.
Put everything in a large salad bowl.
Pour a drizzle of olive oil and the juice of a lemon.
Crumble the feta on top.
Salt, pepper and mix.
Place the bowl in the fridge for a few hours for maximum freshness. Add the toasted pine nuts before serving for the crunch and it's ready!
