Here is the most colourful salad of peas, goat cheese and strawberries

From the crunchiness of its peas to the sweet acidity of its strawberries, passing by the refreshing fondant of its bed of goat cheese : the summer salad imagined by the restaurant Délit — a new, sharp benchmark for cool kids — stands like the recipe simple, quick and perfect for the hot season. Here are the steps to reproduce it.

For 6 persons.


Ingredients :
- 600g shelled peas

- 300g fresh goat cheese
- 200g of strawberries (ideally charlotte or garriguette)
- 2 shallots
- 1/2 bunch of mint
- Olive oil
- Ground pepper
- Flower of salt


Preparation :
Put a pot of salted water to boil.

At the same time, prepare a large bowl of ice water.
Plunge the peas into boiling water for 2 minutes. Drain and cool them in the bowl of ice water.
Finely chop the shallots. Chop the mint.
Roughly chop the strawberries into 4-5 pieces.
Mix the fresh goat cheese with 4 tablespoons of olive oil and a few turns of ground pepper.
Drain the peas once cooled.
Add the peas, the chopped shallots, the chopped mint, a drizzle of olive oil, a few turns of the pepper mill and the fleur de sel to a salad bowl.


Training:
Arrange a large spoonful of seasoned fresh goat cheese at the bottom of your plate and form a well.
Add the peas to the center of the well. Add the strawberries on top Add a drizzle of olive oil and a turn of the pepper mill.
