Kale, lettuce, and other green leafy vegetables provide many health benefits . A study was conducted by scientists from the Human Nutrition Research Center in Boston and Rush University in Chicago. Researchers assessed approximately a thousand people aged 81 and the amount of green leaves consumed by this group over a 5-year period. Throughout the period, the elderly had their cognitive abilities, memory, attention and perceptual speed assessed.
The two main nutrients that provide these benefits are lutein and zeaxanthin, found in vegetables like kale, spinach, and parsley . There are other foods that also contain these two nutrients, but in lower concentrations.
This result reinforces what we've been hearing for many years, that daily consumption of leafy greens, such as kale, watercress, lettuce and spinach, can delay cognitive aging by up to 11 years .
