Recipes: 4 ways to reinvent kiwi this spring
Filled with energy, kiwis are excellent for your health. Zespri unveils four key spring recipes for this delicious green fruit.
With the return of sunny days , fruit is essential. In peak kiwi season, this fruit is often overlooked. However, kiwis are really beneficial for your health. On its own, this little fruit full of pep is a bomb of vitamin C, an excellent source of potassium, full of antioxidants, rich in fiber, vitamins and minerals, low in glycemic index, low in calories but above all it is pleasant, easy to eat and practical to take away.
Zespri shares four of its flagship recipes full of vitamin C to enhance kiwi.
Peanut Butter, Banana and Kiwi Breakfast Burritos
Preparation time: 15 minutes.
Ingredients for 4 persons :
- 4 whole wheat tortillas (165 g)
- 2 tablespoons of peanut butter (80 g)
- 2 Zespri™ Green kiwis
- 100 g of banana
- 10g butter
- A pinch of cinnamon powder (2 g)
- 20 g dark chocolate (optional)
Preparation :
- Spread the peanut butter on the tortillas.
- Peel the kiwis and banana and cut them into slices. Distribute the fruit slices on the tortillas and sprinkle with cinnamon. Roll them carefully to make the burritos.
- Heat the butter in a non-stick pan. Cook the burritos for two minutes, browning them evenly.
- Grate the chocolate on top and serve immediately.
Oat-banana-cocoa waffles with kiwi and blueberries
Preparation time : 35 minutes.
Ingredients for 4 persons :
- 40 g finely ground oat flakes
- 110 g ripe banana, cut into slices
- 1 egg
- 20 g of protein
- 1 teaspoon instant yeast (8 g)
- 2 tablespoons of honey
- 20 g cocoa powder
For the finish:
- 2 Zespri™ Green kiwis
- 100 g of blueberries
- 10 ml agave syrup
Preparation :
- Prepare the waffles. Put the oatmeal, yeast, banana slices, egg, egg white, honey and cocoa powder into the blender. Mix until you obtain a fine and creamy texture and leave to sit for a few minutes. Pour a little batter into a waffle iron at a time and cook the waffles. The waffles are ready when they are golden brown. Repeat this operation until the dough is used up.
- Garnish the waffles. Peel the kiwis and cut them into thin slices. Finish the waffles with the kiwi slices, blueberries and agave syrup.
Spicy Kiwi Salsa with Homemade Tortilla Chips
Preparation time: 15 minutes.
Ingredients for 4 persons :
For the tortilla chips:
- 4 whole wheat tortillas
- 10 ml olive oil
For the spicy kiwi dip:
- 2 Zespri™ Green kiwis
- 1 avocado (200 g)
- 1 red onion (100 g)
- 20 g jalapeños
- A few sprigs of coriander
- 30 ml lime juice
- Pinch of salt
Preparation :
- Tortilla chips: Preheat the oven to 175°C. Cut each tortilla into 8 triangles and brush both sides with olive oil. Arrange the triangles on a baking sheet lined with parchment paper and bake them for about 12 to 15 minutes. Remove from oven and place on a rack to cool until hardened and develop a crisp texture.
- Kiwi salsa: peel the red onion and chop it finely. Peel the kiwis and cut them into small cubes. Cut the jalapeños into slices. Cut the avocado in half, remove the pit and scoop out the flesh. Place the avocado flesh in a bowl and mash it with a fork, season with salt and lime juice. Finely chop the coriander. Add the finely chopped red onion, kiwi cubes, jalapeño slices and finely chopped cilantro. Mix well and serve with the crispy tortillas.
Yogurt smoothie with Zespri green kiwi, pear, strawberries and walnuts
Preparation time: 10 minutes.
Ingredients for 4 persons :
- 3 Zespri Green kiwis
- 200 g pear
- 150 g strawberries
- 250 ml of yogurt
- 20 g of walnuts
- 1 tablespoon of honey
Preparation :
- Peel the Zespri kiwis and the pear. Remove the core from the pear.
- Clean the strawberries and remove the stems.
- Put the yogurt, kiwi, pear, strawberries and walnuts in the blender.
- Add the honey and mix until smooth. Pour into glasses or small bottles and serve.
