Cosy Delight: Artichoke and Cream Pasta for Ultimate Comfort

Veganize your comfort food with recipes from Marie Laforêt’s book. Here is her recipe for artichoke and cream pasta.

Ingredients for 2 to 4 people:  

1 jar of artichokes grilled in oil  

400 g of large pasta of your choice (here, lumaconi)  

50 ml of white wine

500 ml soy cream

1 clove of garlic

1 small bunch of basil

Salt, ground or fresh black pepper  

Recipe :

Drain the artichokes. Reserve the oil.  

Cook the pasta in a pot of boiling salted water following the package directions. Drain them.  

Meanwhile, in a medium skillet over medium-high heat, place the drained artichokes – they already contain oil so no need to add more. Season with pepper and sauté until starting to turn golden brown.  

Add the white wine to deglaze, then the cream and mix well. Add the garlic passed through a garlic press or finely chopped and half of the chopped basil. Mix and cook for 1 to 2 minutes over low heat.  

Stir the cooked pasta into the sauce and serve sprinkled with the remaining basil.  

This recipe can be served as a main course or as a side dish.
