Comfort Food: The addictive burger recipe

Here, the restaurant revealed to us the secrets of its signature KOOL & THE LAMB, which gives pride of place to a generous piece of lamb.

For 8-9 people.

Preparation time: 1 hour.

Cooking time: 24 hours.

Ingredients :

1 shoulder of lamb (on the bone is better) weighing around 2 kg

4 yellow onions

35 g of cumin powder

25 g hot pepper powder

25 g sweet pepper powder

Laurel bouquet

10 g of flat-leaf parsley

2 cloves garlic

15 cl of olive oil

1 tablespoon of mustard

1 preserved lemon

1 red onion

50 g of sugar

100 g of white vinegar

200 g of water

200 ml Greek yogurt

1 lime

A few mint leaves

Salt pepper

8 brioche buns

Preparation :

FOR THE LAMB:

Prepare the marinade: roughly chop the onions. Cut the lemon into small cubes. Mix spices, olive oil, mustard, onions, lemon and herbs

Massage the meat with the marinade to distribute it evenly.

Place the mixture in a vacuum bag.

Once the bag is tightly closed and vacuum-sealed, place it in a water bath between 65 and 75 degrees. Leave to cook for 24 hours.

Take out the lamb and shred it with a fork. Bake for 20 minutes at 180 degrees.

FOR THE SWEET POTATO:

Cut 1/2 sweet potato into 2 cm cubes.

Season the sweet potatoes with salt, pepper, olive oil and cumin seeds.

Bake for 15 minutes at 180 degrees.

FOR THE PICKLES:

Cut a red onion into strips.

Bring 50 g of sugar to the boil in 100 g of white vinegar and 200 g of water.

As soon as it starts to simmer, remove from the heat and make sure that the sugar is well dissolved. Add the red onions and wait at least 2 hours.

FOR THE CUCUMBER:

Peel and core a cucumber. Reserve the cucumber seeds.

Cut the cucumber into small cubes.

FOR THE SAUCE:

Mix the yogurt, lime juice, mint and cucumber seeds together.

Preparation:

Put sauce on both sides of the bread.

Add a tablespoon of sweet potatoes, then a tablespoon of cucumber.

Add 140g of lamb.

Add 4 or 5 pickles and close the bread (sealed on the edges, for a restaurant-like result).
