Cooking Delight: Pink Pasta Infused with Beet Pesto

A slow-release source of energy, beetroot goes perfectly with acai and its low glycemic index. Ingredients :

  • Sunday Natural acai powder
  • Spaghetti of your choice
  • 10 sprigs of chopped parsley
  • 2 beets, cooked and diced  
  • A piece of goats cheese
  • 1 clove of garlic  
  • The juice of a lemon

PREPARATION

For the pesto, mix: beetroot, lemon juice, acai powder, salt and pepper  

Cook the spaghetti for 2 minutes less than indicated on the package, keep a little cooking water, drain.
In a pan, brown the garlic, add the pink pesto and the pasta cooking water. Add the spaghetti and mix well for 1-2 minutes.

Serve the pasta on the plate, add the parsley and the goat cheese. To make the sauce creamy, add a little pasta cooking water.
